Smoked Pork Ribs
Saturday I found a Brinkmann Smoke 'N Grill at a garage sale for $5 and I couldn't pass it up. Sunday I cooked up some pork ribs on the smoker. I'm used some Bone Suckin' Ribs seasoning along with some extra brown sugar and other spices to dry rub the ribs. I found a couple of articles that were helpful since I had no directions for the smoker and I had never used one before:

Smoking 101
I made some home made BBQ sauce:
Saute about 1/2 cup of onion, 1/2 cup green bell pepper, and a tablespoon of chopped garlic. Add about 2.5-3 tablespoons of chopped jalapeno pepper.
Add about 2 cups of ketchup and 1/2 cup of brown sugar. Add some cayenne powder and some Salsa Salad seasoning which is essentially a mix of ancho chili pepper, salt, garlic, onion, sugar, cumin, black pepper, cayenne, cilantro, Mexican oregano, chive, bay leaf, and chipotle pepper.
Simmer the sauce for at least an hour.
I'm also making a little KFC cole slaw with the ribs.
This was the bomb dinner! I'm pulling out the smoker again next weekend for brisket or maybe pulled pork!

Vegetable Grill

3 slices bacon, cooked, drained and crumbled
2 large potatoes
2 medium carrots, shredded
1/4 cup green onions
salt and pepper to taste
1/4 cup butter
4 ounces swiss cheese
*Peel and thinly slice potatoes. Arrange on two pieces of heavy duty foil that has been sprayed with non-stick cooking spray. Add carrots and green onions. Season with salt and pepper. Dot with butter. Fold foil loosely around vegetables and crimp edges to seal. Grill about 45 minutes, turning several times. Open packages and sprinkle with bacon and swiss cheese. Return to grill and cook till cheese melts.
