Chicken Divan

2 Boneless chicken breasts
3 Boneless chicken thighs
1/2 14 oz. pkg. frozen broccoli cut into small pieces
1 can cream of chicken soup
1/3 cup Mayonnaise
2 tbs. Lemon juice
1/2 tsp Curry powder
1 c Shredded sharp cheddar
1/2 c Bread crumbs
2 tb Melted butter or margarine
Salt and Pepper to taste

Precook chicken breasts in a covered baking dish at
350F for 30 minutes.

Cut chicken into bite sized pieces.

Mix soup, mayonnaise, curry powder, melted butter, and lemon juice in a casserole dish.

Add chicken and cut up broccoli. Season with salt and pepper to taste. Add cheddar cheese and mix.

Sprinkle with bread crumbs.

Cover and bake at 325F for 20-30 minutes. Remove lid the last 10 minutes of cooking.

Great served over saffron or jasmine rice.
